A tomato in August and a tomato in January are barely the same fruit. Eating seasonally means eating produce at its peak, when it's most flavourful and most affordable.

Get to know your seasons: bright greens and asparagus in spring, tomatoes and stone fruit in summer, squash and apples in autumn, roots and citrus in winter.

Shop the edges — farmers' markets and the 'special buy' bins are where seasonal gluts land. Build meals around whatever's overflowing and cheap that week.
